This one has to be tried then. Especially when we think that So5 lets the hops roll through.
think i'll have a go at this one around ma\rch and it can sit and condition until the summer.
nice looking recipe. I'll just adjust slightly for my system and a 60 min boil.

But what yeast?? I am now a big fan of White Labs. Been using WLP002 but dont think this is one for a hoppy beer. Which white labs would you recommend???

Without a doubt WLP001.........if you want the hops to really stand out.

Agreed on the crystal.
Maybe 1Kg or pale malt per 1% ABV you want 9for 5 gallons), plus 250g crystal. 150-200g of wheat malt of torrefied wheat if you want a more fluffy, longer lasting head.
Then Cascade hops to 40 IBU or so. Loads of Cascade at the back end for aroma and flavour (it's almost difficult to use too many)
US05 for dried yeast or WLP001 for the liquid version

Do you like sweet stout?
Several years ago I got a wild hair up my bum and threw together a sweet stout with cascade hops. It was an on the fly situation so I don't have an actual recipe. Any good sweet stout recipe you have would work.
