1.5Kg Flaked Maize
150gms Crystal Malt
Mash @ 50º for 30 mins then
get this,I'm mashing at 70º yes 70º
10gms Pacific Gem 14.6% @ 60 mins
50gms Aurora 8.1% @ 15 mins
25gms Pilgrim 9.4% @ FO
US05
340gms Clear Honey @ 15min

SMIFFY, I will be looking forward to the result of this one. I have just done a honey beer. The mash temp will be interesting and hopefully give some sweetness I would expect with a honey beer. Mine was a split wort brew between honey and strawberry..............the flavours being added in the FV rather than the boil. I forgot to account for the gravity increase of the honey when I put the grain bill together
....nowt wrong with a 7% beer though

I brewed my first beer with a honey in fairly recently - I used about 400g I think and it went in at 1 min, and even then I only get a faint honey flavour in the finish (it is there, but not much) - at 15min boil, I'd be surprised if you can detect it (though you'll have the gravity points). Most of the honey is fermentable sugar - you get very little remaining sweetness from it.GARYSMIFF wrote:340gms Clear Honey @ 15min
Not sure about having 30-odd+% flaked maize though - what does it add to the brew over using malt alone?

The FV is giving some very nice honey nose, the sweetness I hope is going to come from the 70º Mash temp

To be honest with the Maize, It does push up my gravity (and its cheap) and I do like the clean Corn taste and if you look at any of my SMIFF brews I like to try things out.
