Too long in primary?

Post by floydmeddler » Sun Dec 20, 2009 12:58 pm

I'm heading back home for xmas and may have to leave my beer in primary as it hasn't finished fermenting yet. This means that it will have been in there for 19 days. Will this cause off flavours in my beer or will it be OK?

Cheers

I have left beer in the primary many times for 4 weeks and have had no issues with off flavours, I believe you will be fine.

Happy Xmas to you.

Basic Brewing Radio did an experiment recently on time left in primary fermenter. Hardly anyone could taste the difference & nobody thought any detected difference tasted bad.

Gravity was 1014 so I transferred it into my better bottle. Should drop over the next 9 days.. hopefully.

Cheers for the help. Definitely food for thought.

It will be fine. There is a flavour that develops when the beer is sitting on the yeast too long (months). I perceive it as a kind of 'creaminess'. Like phlegm that develops at your tonsils when you're swallowing. That's the only way I can describe it!
