Well I have managed to get a fairly red beer by using cara red and small amounts of roasted barley. It's more of a light, orangey red than a deep red though.

I believe vivid red is impossible to create using natural ingredients, and a traditional Irish red ale is not really "red" but reddish-brown.

For your recipe i would consider upping the flaked barley a bit and reducing the roast to less than 100g, perhaps 70g.
You could add up to 500g of cara red, but of course that wouldn't be in a traditional Irish ale.

It turned out excellently. Next time I will half the roast barley to make the colour a bit lighter.
As Dave says, it's not actually meant to be red but "reddish"!
