Recipe advice needed, new malts

Alright gents, ive just got some new malts i want to try out, so ive come up with this, what do you think? and while were at it ,what about the hops?

25 litres

Pale Malt 4000 gms
Munich Malt 350 gms
Caramalt 250 gms
Imperial Malt 200 gms

66' c mash 90 min

Pacific Gem 12 gms 90 min
fuggle 40 gms 15mins
Pacific Gem 2o gms 15mins
fuggle 50 gms 0 mins
Pacific Gem 50 gms 0 mins

thames vally III yeast
OG 1.045
FG 1.011
ABV 4.3 %
IBU 40
EBC 14

not experienced enough to offer advice to you! but the pacific gem is a lovely hop (aren't they all) i used it in my first ag brew along with aurora.

I'd be temped to use one at a time to get a feel for each one. brew a recipe you know well, then stick a bit of imperial malt in it so you can a better feel of what it tastes like

Thanks lads, Kay-Jay, yeah aurora is a nice hop, i recently did an and all aurora hop blonde ale and came out lovley,

bovodave, thats not a bad idea mate, but its time consuming to brew four differnt ales with the malts, but your right, i may just use pale and munich malt to start with, maybe some lemon grass in at the end, for the summer.

Yeah thats the only downside, its time consuming, but I reckon would give you the best feel for each different malt

Thats the way I would do it, brew a tried and trusted recipe and then alter according to the new malts you have. Yeah, it may be time consuming, but on the plus side, you have more beer to drink. :roll:

Taa Bozbru,

Right lads, ive been rackin' me brains over it and ive come up with this, and im feeling good about it, the new malt for me is the munich malt, i didnt want to do just the munich and pale malt because i want abit more complexity of flavour, so im hoping the chocolate and crystal with give it abit more depth.
and hopfully end up with a good hoppy finish,and a good bitterness, yeah anyway, here we go..

pale malt 4000 gms
munich malt 350 gms
chocolate malt 100 gms
crystal malt 200 gms

67'c mash 90 minute

pacific gem FWH 90 minute 20 gms
fuggle 15 minute 50 gms
fuggle 0 minute (steep 30 minute) 50 gms

OG 1.043
FG 1.011
ABV 4.2 %
EBC 49
IBU 40

Just interested to know what the thinking is behind 50g of PG at flameout?

I desided against that in the end, im just using it to bitter the brew now.

Pale malt 4500 gms
caramalt 250 gms
imperial malt 150 gms

66'c mash 90 mins

pacific gem FWH 20 gms 90 mins
challenger 30 gms 15 mins
bobek. 25 gms 0 mins
fuggle. 25 gms dry hop (in fermenter )
og 1.050
fg ?????
Ibu 39
ebc 12


So it's still in the fermenter at the minute,I had a cheeky sip from
the trial jar today,tastes crackin' ! Really happy with it , it's early days to say how the imperial malt has added to the brew,but I'll be able to tell you more after it's been bottled for a few weeks,Ill keep you posted,cheers
