my take on classic American cream ale.

for 25l 78% eff

3.6kg Marris otter (70.7%)
950g Flaked Maize (18.7%)
230g Melanoidin Malt (4.5%)
230g Carapils (4.5%)
80g Torrified Wheat (1.6)

Hops

18g Czech Sazz 60 mins (8.2ibu)
18g Hallertau 60 mins (~10.2ibu unknown acid so used a rough value)
7g Czech Saaz 15mins (0.8ibu)
7g Czech Saaz 5 mins (0.5ibu)
6g irish moss 15mins

total ibu: 19.6

mash 66 for 90mins with 16l water.
60min boil

Yeast - S04

OG = 1045
FG = 1014

mashed 5/1/7 finished drinking it over the weekend. tasted great! and loads of other people thought so also

Looks good to me. Sleeman in Canada do a very nice cream ale. It's a good style of beer to introduce people gently to the world of ales I reckon.

Looks an interesting recipe Des. It's a little more complicated than some I've seen. Corn/Maize seems common to most recipes though.

I had a couple of sips of Des's cream ale last week,must say it is rather good and I will be making this one in the very near future :)

i am pretty sure that the style of CAP's and CACA's is the fact that maize/corn thats in them (along with other things).
