Now that I've been brewing since June 13th and I have lots of TC's and cheap ass juice wines and a couple of Cooper kits under my belt I consider my skillz to be that of a master brewer :lol:

So now I wanna have a bash at an extract to see what it compares like with the kits. (i'm acctually amazed how good kits are these days compared with the Boot's kits I tried 20yrs ago)

My tastes are:
I like a pale/golden ale with a very malty and honey flavour (Golden Glory/Champion style) and i'm not soo keen on bittering ( I had a pint of Marstons Late Hop sunday and it was too bitter for my pallet, but I finished it)

So, how would I go about a 10l brew to suit my taste and what ingredients?

Hello Geezah,

ive just done my first extract brew and have to say its much more satisfying than kits although im still waiting for the results on that as its on secondry fermatation.

have you looked at any recipes for those two you already like? one i found below for Golden glory can be converted to extract quite easily. you would just have to half those for a 10l brew or use it as a base! hope that helps a bit.

25L, 90min mash, 90min boil, 77% efficiency

4.95 kg Pale Malt (2 Row) UK (5.0 EBC) Grain 97.06 % (substitute 3.8kg pale malt extract)
0.15 kg Caramel/Crystal Malt - 40L (78.8 EBC) Grain 2.94 %
75.00 gm Fuggles [4.50 %] (90 min) Hops 32.5 IBU
20.00 gm Challenger [6.40 %] (10 min) Hops 4.2 IBU
15.00 gm Challenger [6.40 %] (0 min) Hops -
15.00 gm Elderflower (Dried) (Boil 15.0 min) Misc
1 Pkgs SafAle English Ale (DCL Yeast #S-04) Yeast-Ale

Beer Profile
Measured Original Gravity: 1.047 SG
Measured Final Gravity: 1.011 SG
Actual Alcohol by Vol: 4.69 %
Bitterness: 36.6 IBU
Est Color: 10.3 EBC

If you don't like your beer too bitter or hoppy then keep it to about 25 IBU and take it easy on the late editions. If you're looking for malty then you want an OG of 1050 plus. Steeping crystal malt will increase the malty sweetness your looking for. Experiment with single hop beers until you find out which hops you like. As nobby pointed out Golden Glory is made with Challenger and Fuggles, both great English hops.

Keep it simple for your first extract recipe.
10L brew
1.35 Kg Spraymalt
0.1 Kg Crystal malt steeped in a hessian bag for 1/2 hour at 60C
Safale SO4 yeast

20g Fuggles 60 min boil
5g Fuggles 10 min from end of boil
Original Gravity: 1.050 SG
Bitterness: 25 EBU
Alcohol 5% ABV

Many thanks HighHops... thats the sort of advice I was looking for.
I've been doing a lot of reading over the last few days and begining to understand more about how all the ingredients work.
I'll give your simple recipe a bash as soon as I have a free FV and report back, from that I will experiment more with other options and see where it takes me.
Are the hops weights as fresh or dried?
I'm presuming dried, but i'll wait on further advice.
(if dried, what would be the alt weight of fresh? - got a mate who works in a brewery ;-) )

Hops are dried weight. They usually come vac packed or in pellet form. I think most breweries use them dried as well, but could be wrong.

Another stupid question..... do I need to boil the spraymalt?
or is it as I think..
Steep the crystal malt for 30 mins
Boil the hops as per instruction
Throw the hop tea and steeped crystal wort into the FV then add the spraymalt as I would with a tin?

have a look at this post it should guide you through most of the brewday, try brewing a recipe of your own you'll be very surprised how well it turns out, i was, i can't believe how much better extract tastes from kits which i brewed for 18 months, it's only a matter of time till all Grain consumes us all.
