Re: Christmas Peat Smoked Stout
Ooh... Looks good...
I like a smoked stout/porter now and again...
I bottled my winter/chirstmas/holiday spiced ale last night....
I have to say that it tasted pretty good straight out of the FV (2 weeks Primary) It also a lovely dark reddish brown

Look forward to hearing how your brewday goes!
BTW : hows the Brooklyn Choco stout coming along? is it in bottles or corni?

Cheers!
Guy

Looks good. I need to get one on or rely on my 47L of Hobgoblin I'm about to bottle.

no worries mate, will pop one aside for you.

No pics of yesterday as it was my 1st brew since June and was feeling a bit rusty. I was also teaching (trying to at least) a mate how to AG brew!
This morning the US-05 has kicked off and formed a nice crusty top on the wort! I love that yeast!

Cheers

Re: Christmas Peat Smoked Stout
Well this is mellowing down nicely now. There was a slight twang to it a couple of weeks ago, and when I took some along to the NCB meet. It is still lacking in the smoke department but I think that was because of the age of the peated malt! I think after two attempts with peat smoked malt, rauch malt is the way to go for a good amount of smoke!
Nice roasted barley flavours and the fuggles haven't dominated. It's a great colour, with loads of body from the flaked barley! All in all it's gonna make a good winter stout!

Re: Christmas Peat Smoked Stout
Just got back from San Diego. Went for a tour of Stone Brewing Company while there..........fantastic range of beers and a serious operation.
My favourite of theirs was their Smoked Porter, using peat smoked malt. Really fancy giving it a go. Any hints or tips?

Re: Christmas Peat Smoked Stout
Really fresh peat smoked malt fallen! The last porter I did with PSM in MARCH only had 63g of PSM in it yet it had more smoke flavour in it! for this stout I used the same bag of PSM and even though it still smelt peaty it didn't transfere into the beer as much!
Let us know how your gets on!

Re: Christmas Peat Smoked Stout
LB, I'm putting together a recipe for a clone of Stone Smoked Porter in Beer Engine (recipe I found below) but Beer Engine doesn't have peat smoked malt in the grain list. What did you assume was the extract potential for PSM? I can't find this info anywhere on t'internet.
Amount Item Type % or IBU
10.50 lb Pale Malt (2 Row) US (2.0 SRM) Grain 80.77 %
1.50 lb Caramel/Crystal Malt - 60L (60.0 SRM) Grain 11.54 %
0.50 lb Chocolate Malt (350.0 SRM) Grain 3.85 %
0.50 lb Peat Smoked Malt (2.8 SRM) Grain 3.85 %
1.5 oz Chinook [10.70 %] (60 min) Hops 42.5 IBU
.75 oz Mt. Hood [5.20 %] (10 min) Hops 10.5 IBU
1.00 items Whirlfloc Tablet (Boil 15.0 min) Misc
1 Pkgs California Ale (White Labs #WLP001) Yeast-Ale

Re: Christmas Peat Smoked Stout
Its just 'smoked' Pale malt, so assume the same figures at Pale Malt etcFallen wrote:LB, I'm putting together a recipe for a clone of Stone Smoked Porter in Beer Engine (recipe I found below) but Beer Engine doesn't have peat smoked malt in the grain list. Re: Christmas Peat Smoked Stout
As pdtnc said, it's peated pale malt. I've got it in beeralchemy as
colour = 2.2L
extract = 80%
Moistyre = 5.0%
Your recipe looks very good by the way! When will you be doing it?

Re: Christmas Peat Smoked Stout
Lovely job. Cheers.
Next chance I'll get for a brewday will be Sunday 21st Nov. Struggling to decide what to do..........American Pale Ale, English Session Bitter or the Smoked Porter are all on the 'to-do' list. Think the Porter's edging it!!
