At what point do I test the Mash pH

(That's water to the rest of us!) Beer is about 95% water, so if you want to discuss water treatment, filtering etc this is the place to do it!

OK, this is a really silly question, but I have read the books, done a search in the forum and the answer escapes me.

At what stage should I test the pH of the Mash.

Is it

1. Near the beginning of the Mash
2. In between Mash complete and the start of the sparge.
3. At the end of the sparge, i.e. test the wort that is collected in the boiler pre boil.

I think testing it after the mash is complete and before I commence sparging would give me the figure I am looking for, but I'm not really sure.
