Increasing alkalinity

(That's water to the rest of us!) Beer is about 95% water, so if you want to discuss water treatment, filtering etc this is the place to do it!

Increasing alkalinity

I am planning a brew day tomorrow for a dark beer with an EBU of approximately 60. My water is usually around the 80mg/l CaCO3 but I would like to increase this to say 100-120 mg/l.

What do I need to do/add to get to my desired total alkalinity?

I would try 2g of sodium bicarbonate in around 35L of liquor . . . Then measure your alkalinity and decide if it is too much or too little.
