This weekend I will be brewing this:-

Inspired by Flounder's Red Eye
Fermentable Colour lb: oz Grams Ratio
Lager Malt 2.5 EBC 13 lbs. 3.6 oz 6000 grams 62.5%
Pale Rye Malt 5 EBC 6 lbs. 9.8 oz 3000 grams 31.3%
Cara Red 50 EBC 0 lbs. 14.0 oz 400 grams 4.2%
Cara Aroma 400 EBC 0 lbs. 7.0 oz 200 grams 2.1%


Hop Variety Type Alpha Time lb: oz grams Ratio
Magnum Whole 14.5 % 60 mins 0 lbs. 2.8 oz 80 grams 85.6%
Amarillo Whole 9.5 % 10 mins 0 lbs. 1.4 oz 40 grams 10.2%
Amarillo Whole 9.5 % 5 mins 0 lbs. 1.1 oz 30 grams 4.2%
Amarillo Whole 9.5 % 0 mins 0 lbs. 1.1 oz 30 grams 0%


Final Volume: 35 Litres
Original Gravity: 1.061
Final Gravity: 1.015
Alcohol Content: 6% ABV
Total Liquor: 53.9 Litres
Mash Liquor: 24 Litres
Mash Efficiency: 75 %
Bitterness: 80.90 EBU
Colour: 28 EBC


I am going to dry hop with a shed load of Amorillo to.

BUT, what yeast?? Could go something spicy, T-58?? Or good old US-05 for a cleaner profile and let the hops and rye shine through

I would be really interested in your thoughts

I would probably go with something mellow for the yeast. S-05 or Wyeast 1187 if you can get it.

From personal experience, that is a lot of rye. I might cut that quantity in half. also out of curiosity, is there a reason you're going with lager malt? I would assume that beer is made with pale ale or maris otter malt.
