Hello from Australia,
I have the Graham Wheeler book BYOBRA and I would like to brew his recipe for Hop Back Summer Lightning. What yeast would be good for this recipe and is this ale served from a beer engine in the UK?

Hi,
I used s04 for this recipe and have got to say i was well impressed,not to be bias i gave a few to mates to watch their response and they couldn,t get enough of it,needless to say i,ll have to brew again, none left!!!.
Just follow G.W,s recipe,i bottled mine,hope this helps.

Thanks for the reply. I was thinking of S04 or maybe Danstar Windsor but I was interested in what other people had used and what their results were. In the UK, do they serve this ale from a hand pump?

Hi,
SO4 or Nottingham would be fine for this beer, I'm not sure about windsor as I dont think it attenuates well - this may leave the beer sweeter than you'd like it. Maybe save the Windsor for a malty style beer.

I have heard or read somewhere that Hop Back use S04 for SL (I think it was with reference to reclaiming the yeast, so not worth the effort).
I have tried brewing SL with US-05, Gervin (Notts) and S04. US-05 was reasonable, Gervin a bit too dry and S04 closest.
I have also heard that the Downton Brewery (adjacent and tightly connected with Hop Back) use S04 in their Chimera range.
I have brewed Chimera IPA with WLP005 and US-05. The WLP005 was too malty (but extremely tasty) and US-05 was too dry.
I will try WLP007 and S04 next time (50-55L split into two fermenters).

i use so4 for the wheeler recipe summer lightning its bang on, i had half a doz of the real bottles last summer i opened them carefully so i could re use the tops did the recipe used the original bottles & tops that i had and tried them out on a few real ale drinking friends the results were as i expected no one knew the differance what more can you say to that ?

Thank you to everyone who replied. I picked up some Challenger hops today and I will brew it next week using S04.

From DaaB's experiences of Hop Back yeast on here (now partially gone) I didn't think that Hop Back used S04 as their primary strain.

When I brewed this recipe I used WLP022 Essex strain, just because I had split a vial in to several starters so it was the yeast I was using at the time. It made a very good beer similar to how I remember it. I`ve only tried this via hand pump several years ago in Salisbury.

Glad to hear that my Summer Lightning has been in the FV 5 days now and I used S04,was going to use 002 but had none in stock,thats been sorted now thanks to the Malt Miller.colgilbec wrote:Hi,
