So cricket was a wash out today, but it gave me chance to get some beer on the go - been a while since I posted a brewday post as I forgot to do the last one (which was my saison I need to rack tonight...). I brewed Jamil Z's "Evil Twin" recipe (a very hoppy, and strong American Amber/Red ale) with a few tweaks according to what we can get hold of and hop alphas.

Recipe was (for 34L):

6.5kg Maris Otter
1kg Lager malt
660g Munich
540g Light Crystal
320g Aromatic (replacing Victory)
320g Dark crystal
160g Pale Choc
120g Carapils (didn't have quite enough light crystal...)

Mashed at 67C for an hour and a quarter.

Hopping:

Summit 14.3% 10g 70min FWH (added a small amount to avoid boilover...)
Amarillo 10.7% 18g 20min
Centennial 11% 18g 20min
Amarillo 10.7% 32g 10min
Centennial 11% 32g 10min
Amarillo 10.7% 40g 0min
Centennial 11% 40g 0min

OG turned out a little high at 1069... IBUs should be about 35 - the majority of which come from those big late additions.

Yeast was a 1.7L starter of WLP001. (Which I forgot to split so will need to top crop off a little... #-o ) It's currently tucked up with the fridge set at 17C.

Made this a couple of times and its just a fantastic recipe. Lovely malty backbone, but still enough hops to hit you in the face. I dry hopped with another 25g each on the second attempt and it was even better (did a control against a few bottles which I didnt dry hop).

Centennial and Amarillo seem to work so well together. Brewing this tomorrow. Same hops but a summer pale ale.

I have enough centennial and amarillo to dry hop it with about 10g of each I think - I'll see what it's like when I rack, but I might just dry hop a corny and then bottle the rest without. Smell was pretty fantastic today though :D

nice one G! Im like the look of this. I made a 'APA' last year that came out more as a A red 'due to me picking up the E dark crystal instead of the medium. Turned out awesome.

I also have most of that in stock. :D

Looks like a decent head of yeast building up in the fermenter already. Should really get into its stride today and have released the temperature control to 19C to let it run a little quicker (but still fine flavourwise - will just up the ester contributions a little).

That certainly looks tasty, malty, layered and hoppy :) Maybe I should post you a bottle of AG#56 before I drink it all... fancy PMing me your address?

Not taken the hydro sample yet - but everything has dropped out so it's well and truly done. I'll measure the gravity tonight.

Finally kegged and bottled yesterday. Added 8g Amarillo and 10g Centennial to the corny as dry hops. FG is 1019, so 6.7% ABV I think, which is pretty much bang on the original - higher SG and FG.

Drinking tonight - great! Amarillo and Centennial combine to give lovely citrus, tangerine, piney, resinous flavours. Lovely caramel malt backone, and it has great balance. Yum. When the dry hops really kick in, it'll just round off the aroma side of things really well.

Leedsbrew: thoroughly recommended - you should definitely brew this recipe!

Nice one G. I really like dryhopping in the corni. Works a great after about two weeks. I've just moved house so won't be brewig for a couple of weeks but I think this is going to be the first one.

It has about another 10 days before I bottle a couple from the keg for Bristol... should be about right for the dry hopping to kick in a little I hope (more through luck than judgement - it was in the fermenter for 3 1/2 weeks....) - though, dry hopping is at fairly low levels due to current stock - I would happily up the dry hops to an ounce of each!
