What can I say - I love Honey and I like the old Yellow Hammer we get down in Devon.
I want to make a beer that is as light as possible with a smooth mouthfeel and is laced with honey throughout. Just the thing for the summer time barbeques.
This is a bit of a self invented recipe so definately need telling if it will taste odd!
I have been really torn on two variations of this recipe. One is to use Lager Malt for it either instead of or 50/50 with pale malt, the colour would be much lighter and possibly more what I want. I am also thinking that adding a sizeable amount of british wheat malt would give it that smooth mouthfeel and nice haze. Again thoughts on those two idea very welcome!

Grist:
Pale Malt (5 EBC) 7000g - 85.4%
Weyermann Carapils (4 EBC) 500g - 6.1%
Honey (2 EBC) 500g - 6.1%
Honey, Priming (2 EBC) 200g - 2.4%
Hopping Schedule:
First Gold (8.3 % AA) 40g @ 90 mins
First Gold (8.3 % AA) 20g @ 10 mins
First Gold (8.3 % AA) 40g @ 0 mins
Mash Efficiency: 80 %
Original Gravity: 1.050
Final Gravity: 1.012
Alcohol Content: 5% ABV
Bitterness: 24 IBU
Colour: 8 EBC
Fermentation - 2 weeks @ 18c with WLP002
I particularily want that floral aroma in this beer, either through using the right type of honey or by way of an adjunct like elderflowers. Tips please?!?!
