Hi all,
I'm looking for some advice from hopheads on which hop to go for in my latest reincarnation of my Black IPA.
It is slightly revised version of one that I brewed happily last year so the method of 'blackening' it will remain the same and the grains will do more or less but alas the hops won't. I am unable to track down any of the Amarillo which worked so well for me last year so I would like some counsel on to what to sub in to replace it with...Bravo, Simcoe...Stella?

I'll be cold steeping much of the Carafa as I did last year and the rest will go into the mash tun at fly sparging.
Other Hops I will have are;
30g EKG
40g Willamette
25g Centennial
25g Magnum
I will be ordering much of my stuff in the next couple of days and undecided on what should be the signature hop in this brew, appreciate any responses people find time to give on this.

That recipe looks right up my alley arturo!
The holy trinity of hops in my Black IPA is Cascade, Amarillo and Columbus - I will be bottling the latest batch of this brew at the weekend and the fermentation cupboard smells fantastic.
If I needed to substitute the amarillo I would try to get some galaxy or centennial. I have heard of breweries blending Apollo and calypso and getting close to amarillo flavour but not sure of the ratios..

Cheers Jimp2003, I'll see if I can scour every nook and cranny for something similar to Amarillo or post a plea to buy 100g from someone who might have a stash in the Articles for Sale or something.

Any of the citrussy hops, while not an exact sub for amarillo, would work. Simcoe, summit, sorachi ace, cascade and glacier are a few possibilities.
I'm just here for the beer.

Well this is what Hops I have to fill out schedule of this IPA;
Bobek - 50g - 5.5%AA
Fuggles - 60g - 3.6%AA
EKG - 61g - 5.5%AA
Willamette - 40g - 4%AA
Cascade - 82g - 6.8%AA
Centennial - 38g - 12.3%AA
Magnum - 5g - 14.5%AA
Will be looking at probably putting the Magnum in with some cascade at the start to bulk out the bitterness and then work in some of the Willamette, Bobek and Cascade through the schedule I think. Would like to dry hop this with Centennial, Cascade and Bobek.
