Christmas ale

Post by Sean P » Sat Oct 20, 2012 4:01 pm

I was planning on brewing a dark Xmas ale with spices but haven't ever added spice to my beer before
This is the grain bill so far

Maris otter 5 kilograms
Crystal 0.5 kilograms
Barley (Flaked)0.25 kilograms
Chocolate 0.25 kilograms
Oats (Flaked) 0.2 kilograms
Black. 50 g

25 g target @ 90
25 g fugges @ 10

Nottingham yeast

Has anyone got advice on what spices to add and when, so far I'm considering cloves, cinnamon orange zest

I did one last year, I added a piece of cinnamon stick about 1 gram, a couple of cloves and a good pinch of freshly ground nutmeg at flameout and steeped for 40 minutes before cooling. Turned out nice too.

Hi,
Is the chocolate in your recipe chocolate malt? How/when do you add it? This sounds like an interesting recipe and I'm interested in creating something similar.

Thanks.

Yes it was chocolate malt and went in the mash with all the other malts
