Single Malt IPA.. its not a whisky

Starting to plan my first AG brew in over 3 years. I though I'd keep it simple as I'm using a whole new setup and it's likely to take me a few goes to get an idea of efficiencies etc.. but how does this sound as a really basic basic IPA on a 60 min boil?..

Hey Dave, great to see you going for it again!

Apollo are a very interesting hop. I brewed a lovely American red ale using them a few weeks ago and it was superb! The only thing i'd tweak in your recipe is to up the Apollo! I steeped 50 and dry hopped 50. Aromas were insane. The finished beer had pine and blackcurrant notes. Weird combo I know, but that's what I got.

What yeast will you use?

So just increase the late additions? maybe 10min - 30g, flame out 30g? (I don't even know how much Apollo I've got it's an open bag in the freezer which I guessed at about 80g lol).

As for yeast, I'd not really thought that far, perhaps S04 as I've used it for other brews with good results?

I did an all apollo pale ale/IPA recently with a similar amount of hops as you, it's rather tasty. I had to let it condition for a while for it to balance out as I used a lot (a bit too much I think) of aromatic malt in the grist. If I was to do it again I'd up the hops as well and simplify the grains (like yours)


I left out the sugar as I got an OG of 1.064 just from the malt

40% Maris Otter
40% Vienna
10% Aromatic malt
10% Sugar

OG 1.064

Yeast S-04

Mashed at 152F


Hops - All Apollo

25.5 IBUs 60min 20g
14.2 IBUs 20min 15g
7.6 IBUs 5min 20g
1.5 IBUs flameout 20g

Total - IBUs - 48.9

I think that you might like to consider US-05 yeast, I believe that you will get the most out of your hops shining through that way :beer:

I've weighed my Apollo and I've got about 75g which has left me with this:

I really wanted to stick to just the one hop variety but I do have 100g Summit and 120g Stella to chuck into the mix if need be.

Looks to me as though you have a good level of bitterness compared with your malt proportion. If you go any higher you run the risk of being out of balance. Looks like a good brew. Have you made up your mind on the yeast?

This one I think will just be S05 I recon as SWMBO isn't wearing the idea of splitting yeast and filling the fridge. lol

I inadvertently ordered some more Apollo whilst browsing the Malt Miller website so might just ramp up the flame out hops.

Seems as I've ordered more hops, I've done a final revision for this one to really bring out the Apollo flavors.
