tusker recipe anyone?

Post by timbo41 » Mon Jan 14, 2013 9:28 pm

A mate who spent some time in Kenya has asked if I can try to recreate a beer from his youth..Tusker. I understand it to be a fairly simple recipe 90% malt 10% unrefined sugar, pilsner style. Can anyone elaborate an provide a biab shedule using a 7 gall baby burco please? :)

Found an extract recipe for it :)

Tusker Kenyan Lager beer

4oz Carafoam
5lb Pilsen Light DME ( 6.25lbs Pilsner or Lager Malt)
1 cup table (cane) sugar
1oz Hersbrucker (60 min)
1oz Styrian Goldings (5min)
Lager Yeast ( W34/70 or liquid Lager strain of your choice)

Around 4.3% ABV.

For authenticity you'll need to use unrefined cane sugar in the above.

I think for a BIAB or AG, you need to use 1.25lbs of grain to give the equivilent of 1lb of LME - but I could be out on that.... #-o sure someone more experienced than I will tell you.

Carafoam is another name for Carapils - probably be able to gently roast some of your pilsner/lager malt to make it ?? (like making crystal from pale)

Checking the history, it seems that the "authentic" Tusker was actually made from imported LME orginally - only moving to malted grains some years later. Also from the tasting notes I found, they mention quite loudly that the beer has "excellent lacing and head retention" - maybe a little wheat malt in there too ?
