My preferred is 30 gms Carafa 1 spezial, 400 gms caramunich 1 or 2, top up with pale Munich to desired strength, I usually brew altbiers to 11.5 Plato (1.045?). German spalter or Hallertau hops to 27-30 IBU, only for bittering. That's for 21 litres.
But again the key is yeast and then lagering like lager beer.
