Hi Everyone

I was in Leeds over the weekend, and developed quite a taste for Kirkstall Dissolution IPA. It was a great pint with a really nice hoppy taste, and I wouldn't mind doing something similar myself.

Anyone else tried this IPA? Or have a recipe or hop list? I have some basic IPA grain bills but wanted to try and capture the same hop character.

I've never tasted it. The brewers' description, website, etc, really don't give anything away, do they? 5% ABV and amber coloured. That's it.

There's not much to go on, but http://www.drinkbritain.co.uk/drinks/12 ... lution-ipa slips a big clue: Simcoe hops. That's key. Most reviewers describe it very much like an American IPA, with strong grapefruit and pine resin notes, some even say a harsh bitterness. Sounds about right.

If I were you, I'd try a grainbill along the lines of 93% Maris Otter, 4% Dark Crystal, 3% Victory or CaraMalt to OG 1051. Then hop it with Columbus, Centennial, and late Simcoe, or even simply Magnum plus Simcoe, probably light Simcoe dry-hopping too. It's almost certainly fermented with Chico/US-05. This'll get you very close, or will at least produce a beer which matches the preceding description.

Wow cheers Seymour! That's a great bit of detective work on the Simcoe hops... I looked at numberous reviews and blogs earlier and could only find the 'grapefruit and pine resin notes' reference, and I am not experienced enough with IPAs, AIPAs and the charactistics of the hops. I do have my first AIPA conditioning at the moment with Chinook, Centennial, Amarillo and Cascade, but I've not tried it yet.

I will have a play with the BrewMate and see what I can come up with... thanks again for the advice, it will be a great beer anyway even it it's not an exact clone.

I've had a play with BrewMate and come up with this for an IPA with Simcoe:

Original Gravity (OG): 1.056 (°P): 13.8
Final Gravity (FG): 1.013 (°P): 3.3
Alcohol (ABV): 5.58 %
Colour (SRM): 5.3 (EBC): 10.4
Bitterness (IBU): 76.9 (Average)

92.24% Pale Malt
4.31% Caramalt
3.45% Crystal 10

1.2 g/L Columbus (14.2% Alpha) @ 90 Minutes (Boil)
1.2 g/L Centennial (9.7% Alpha) @ 30 Minutes (Boil)
1.2 g/L Columbus (14.2% Alpha) @ 5 Minutes (Boil)
1.2 g/L Simcoe (12.2% Alpha) @ 5 Minutes (Boil)
0.8 g/L Simcoe (12.2% Alpha) @ 5 Days (Dry Hop)

Single step Infusion at 66°C for 90 Minutes. Boil for 90 Minutes

Fermented at 20°C with Safale US-05

I can use some Centennial left over from my previous AIPA, which used Chinook, Centennial, Amarillo and Cascade and dry hopped with Amarillo and Centennial. I've had a quick taste of it at 2 weeks conditioning and although it's very nice, it's not massively hopped.

I could go for a hopier for this one, so any advice on hop quantities greatly received. Thanks in advance :)

Looks pretty good overall. As I said, we're shooting in the dark here, but I would reduce the first Columbus a bit, and add some Simcoe at 30 or 45 min. Keep in mind, Simcoe is the only hop we know for sure, so let's make sure it's the predominant flavour and aroma. It's even possible the target beer is 100% Simcoe.

Cheers Seymour, I'm not expecting an exact match, but it will have a great taste anyway!

Only slight problem... Simcoe are twice the price of most of the other hops! Oh well, got my heart set on this now so will get ordering ingredients this week!
