citra/cascade/amarillo recipes?
citra/cascade/amarillo recipes?
does anyone have any recipes using these three as a combination? American Pale or Amber style would be nice
I already have one "go to" golden ale recipe using Citra & Cascade, and another (American Pale Ale) using Centennial/Chinook/Amarillo/Cascade, but I don't think I've seen one using Amarillo, Citra & Cascade. Do they work well as a threesome, or would I be better doing an Amarillo single hop and one of my go-to recipes?
Doing a demonstration BIAB at my LHBS in a couple of weeks so it would be nice to have an interesting recipe

Re: citra/cascade/amarillo recipes?
It's definitely on my to do list - has been for a while. I bought some Citra especially for a Cascade/Amarillo/ Citra brew - I might even throw in some Nelson Sauvin.
My only slight worry would be that I find Cascade can be a little harsh as a sole bittering hop so would be inclined to split all three equally over bittering/ flavour/ aroma and dry hops.

here's one:
Take as much of those 3 hops as you can afford and chuck them in a pale ale leaving plenty to dry hop. How could it go wrong?

Re: citra/cascade/amarillo recipes?
First of all, I consider this sort of "uncharted territory" ripe for experimentation, and you should be just the guy to do it...
But to answer your precise question: no, I've never seen a recipe calling for Citra and Cascade and Amarillo together. We know Citra and Cascade meld well. We know Cascade and Amarillo meld well. But I predict Citra (lemony and tropical fruity) and Amarillo (bitter orange, cinnamon, herbal, dark and mysterious) might be sorta incompatible. Maybe not, though, I've never tried it nor read about it.
However, If you're interested in DELICIOUS beers containing Citra, I have some info about:
Adnams Ghost Ship
Adnams Ginger Beer
Adnams Mild
Badger/Hall & Woodhous Golden Glory (Golden Ale)
Sierra Nevada Ruthless Rye
St. Austell Brewery Bad Habit (Belgian Tripel based on Westmalle)
Tallgrass Halcyon Unfiltered Wheat
Three Floyds Zombie Dust
Just let me know if you want more...

I love your adventurous spirit, and I too hope he gives it a try for all our benefits, but there are definitely some unpleasant combos...bob3000 wrote:...Take as much of those 3 hops as you can afford and chuck them in a pale ale leaving plenty to dry hop. How could it go wrong?
Yeah, but like I said, there's one way to know for sure!john_drummer wrote:that's what I was afraid of...But I predict Citra (lemony and tropical fruity) and Amarillo (bitter orange, cinnamon, herbal, dark and mysterious) might be sorta incompatible

Seymour, do you get St. Austell over there or have you researched? It's my local brewery and I spend a lot of time there if I can help it. They have an annual beer festival with about 150 beers. They did a few Belgian ales for their last festival but I didn't get chance to try this one although tried a couple others. When you eventually get over here time it coincide with this at the end of November. Worth a visit.seymour wrote: St. Austell Brewery Bad Habit (Belgian Tripel based on Westmalle)

been following that one closely as the grainbill is amazingly close to one of my beers but i'm still messing around with similar hop combinations. the amarillo and citra together seem to have worked pretty well together here so maybe i try something along those lines too..
dazzled, doused in gin..

Sadly, I have not actually tasted them, it's based on research only. Hopefully someday I can meet-up with you at their festival, that would be awesome.Matt12398 wrote:Seymour, do you get St. Austell over there or have you researched? That's another one I can't get, but it does sound delicious.jonnyt wrote:You missed the best of all, Oakham Ales Citra
OH YEAH, GOOD CATCH! I totally forgot about that adaptation. My original Seymour Bready Red recipe doesn't call for Amarillo and Citra, but Barneey adapted it that way and described it as "a cracking brew" and "tastes bloody fantastic." So, there you go, john_drummer, it sounds like they're compatible after all! Crowd-sourced homebrew data saves the day again!jaroporter wrote:but seymour..But I predict Citra (lemony and tropical fruity) and Amarillo (bitter orange, cinnamon, herbal, dark and mysterious) might be sorta incompatible

Re: citra/cascade/amarillo recipes?
I have just bottled an extract brew using the three of these hops with Magnum as a bittering workhorse
It was to 46 IBU with 5, 10, & 15 of each hop at 15, 10, & 5 minutes respectively with 20 of each for a half hour 80 degree steep finished with 20 of each dry hopped for five days.
I bottled it on Sunday and it smelled tremendous.
Really looking forward to getting in about it!

Loads of those hops, pale malt, job done!
Seriously, you can't go wrong if you like hop bombs with those hops.
More the merrier.
