Re: Recipe Wanted
SEYMOUR – WILLIAM STONES BITTER CLONE
This is my interpretation of a particularly hoppy historical English Bitter. Fear not the 10% sugar, the original contained 20% and people still loved it. Use regular brown cane sugar from your kitchen--nothing special-- but it'll keep the body light and crisp, with some nice caramelly, fruity esters, all of which will help showcase the fun English hops. Enjoy!
6 US gallons = 5 Imperial Gallons = 22.7 Litres
GRAINBILL:
77% = 6.16 lb = 2.79 kg, Pale Malt
13% = 1.04 lb = 472 g, CaraMalt
10% = .8 lb = 363 g, Brown Cane Sugar (added to boil)
MASH ≈ 152.6°F/67°C 60 minutes or until converted.
SPARGE & COLLECT 7 US gal/5.8 Imp gal/26.5 L pre-boil
BOIL 90 minutes, add sugar, a pinch of gypsum to make the hops pop, drop Irish Moss at 15 min remaining. If you sneak a little molasses in, I won't tell.
HOPS:
.3 oz = 9 g, Challenger, 90 minutes
.3 oz = 9 g, Northdown, 90 minutes
.5 oz = 14 g, Goldings, 15 minutes
.5 oz = 14 g, Progress, 15 minutes
.5 oz = 14 g, Goldings, dry hops added to fermentor
.3 oz = 9 g, Bramling Cross, dry hops added to fermentor
YEAST: X TZB/S-33/Edme strain, I'm not giving up on the yeast from your wife which the good Lord gave you, but I am recommending you pitch all three remaining packets. Trust me on this.
STATS (assuming 75% mash efficiency and 75% yeast attenuation):
OG: 1038
ABV: 3.7%
IBU: 28
COLOUR: light amber

Re: Recipe Wanted
How much molasses would you use? Also, would you add it at the boil?

Re: Recipe Wanted
Just a very small tip from the container into the boil. Doesn't take much at all to know it's there.
