(AG2) Hoppy Light beer

Post by bertie88 » Tue Jun 04, 2013 3:32 pm

Hi,

I am up to my elbows in AG2 with my mashed together maxi-BIAB kit (with an 18L swan boiler) My first AG was a leffe clone/Belgium double I got as a kit from 'the homebrew company' and it has turned out really really well. I thought I would try and make my own recipie (steal and combine other peoples). I am after a light around 4% fruity/USA hoppy beer but abit malty for summer.

Anyway long story short I have got the mash on with a grain bill of;

3.5kg Pale Malt
0.5 kg Munic Malt (type 2)
0.2kg Carmel malt (crystal light)
A small handful of oats

I am mashing at 69 to try and get a decent 'mouthfeel' from the low % beer.

Hop wise I am thinking (but brew length is only 18ltr so worried it may be too bitter?):

10g Galaxy 60mins
25g Cascade 15mins
20g Galaxy 15mins
30g Galaxy 10 mins
20g Galaxy and 5g Cascade for 80 degree steep
Then dry hop from 3 days with 20g Galaxy and 15g Cascade after 7days of primary
Yeast US05

Anyway would really like to know if this will work ok or end up bad? As I say mid way through the mas so might have got this up a bit late

Thanks

I would check the IBUs but it looks like a cracker to me

+1

I would dial back some of the minutes rather than the quantities of hops, I like to add at 5mins or less
no palate, no patience.

I agree with the others about checking your IBU's and maybe moving the 15 min Galaxy addition to a steep or dry hop. As it's maxi-BIAB presumably you will liquor back at the end which will drop the IBU's a little. Also, what is your efficiency ? I make that about 60% for a 4.2 % beer ?
Nice looking recipe though.

Thanks for the replys. It all turned into a bit of a nightmare after the steeping hops caused my tap/hop filter to block half way through, so lots of jugging out and running it through voile which increased the bitterness even more....yeah my efficiency has been really bad (well I have only done one other AG) but doing maxibag I only got 18 ltrs at the right gravity (so I didnt water back on my first AG) The galaxy hops smelled really nice.....the wort doesnt taste as sweet as I was expecting and there is a bitterness there already. The 15mins hops got combined with the 10 mins hops (more by my missing them than design.....but looks to have been a bit of luck from what has been said above. If is does turn out too bitter is there anything I can do after it has fermented?

The bitterness will die away over a long period of conditioning as the alpha acid will neutralise slightly from what I've read. I'm no expert though.
What I will say is that what you are tasting now will be nothing like the finished product! I'm sure it will be fine just try and be patient! :D

Although very nice late on, a lot of people say that Galaxy can be very harsh as a bittering hop.
