Thoughts on my planned Xmas brew..

Post by jayjt29 » Tue Aug 13, 2013 7:31 pm

Not really posted much on here but spend alot of time reading and learning from here, been brewing around a year and started BIAb in January, im on my 8th BIAB now and love it!

Anyway, heres a recipe ive put together from other xmas style beers, thought id ask your veiws on it.
As with all my other BIABS, i mash for 60 mins and boil for 60 mins.

Grain bill:

3.5kg M/O
100g Black malt
400g Roasted Barley
280g Flaked Wheat
1kg light brown sugar (added to boil)

Hops:

80g East Kent Goldings -- 60 mins
20g East Kent Goldings -- 10 mins

Misc:

irish moss last 15 mins

4x Cinnamon sticks 30 min boil

Spruce tips??? last 15 mins, but how many grams? anyone used them before?

bag of raisins soaked in whiskey for a few weeks, then added to fermenter (minus whiskey!)

Yeast safale S-33

Using brew mate, its calculated at 6.15% for a 23 litre brew length, OG 1.057 FG 1.010.
Bitterness IBU 48.4, Colour SRM 34.0

Any thoughts welcome
Cheers :D

Cheers Seymour, anyone any idea about the spruce tips? How much to add for a small amount of flavour?

Not sure about the spruce tips but I would just put the whole lot of the raisins in with the whiskey, do this with my oak chips when I want to make a special porter. You won't notice the whiskey that much.

I've just made an all grain with cinnamon, star anise, cloves etc, couldn't taste a bit of it. Just ended up chucking some mixed spice in a muslin bag,in the FV in the end.
