SWMBO parents are away for a few days so I get to brew...
As usual it's gonna be a fruit salad hop heavy IPA with a couple of hops I've tasted, but never used before, and one that I hadn't even heard about ago one week ago.
Athanum, Galaxy and the new Vic Secret.
I was supposed to pitch this onto a recovered Kolsch yeast - but that beer isn't ready yet and I have no S05 left - only Windsor and S04, so I am gonna go with the S04.
I'm going to use Brunwaters recommendations and not my own excel sheet for water treatment. This will be my first time using lactic acid as my beer can be a little minerally and I want to see if that is due to CRS - my water is quite hard so the CRS introduces a fair amount of sulfate. I am aware that lactic leaves it own flavour, but nothing ventured nothing gained.
Water treatment will be: Approximate Pale ale profile
Lactic to drop the Alkalinity to 95 (as Bicarbonate). Aiming for pH 5.3.
Calcium 190 ppm
Sulfate 200 ppm
Chloride 55 ppm
Magnesium 15 ppm
through the addition of gypsum, calcium chloride and Magnesium Sulfate
Original Gravity (OG): 1.058 (°P): 14.3
Final Gravity (FG): 1.013 (°P): 3.8
Alcohol (ABV): 5.80 %
Colour (SRM): 8.4 (EBC): 16.5
Bitterness (IBU): 58.1 (Average)

Single step Infusion at 64°C for 75 Minutes. Boil for 75 Minutes
Fermented at 20°C with Safeale S-04
Any suggestions comments welcome as usual. Also, would anyone swap out one of these hops for another which might blend better ?
