Anyone tried making a wheat beer/weiss beer with 100% extra light dry extract?
I.e. the thing making it a wheat beer is the yeast, in this case Malt Millers Weisse yeast.
Doing extract to save time which I am doing a lot lately, and looking how many styles I can successfully make with using just dry extract + steeping grains and then changing the hops and yeast up.

They make a dry extract which is a blend of wheat and barley malt. I'd strongly recommend that, because there are definitely chemical aspects of wheat malt which provides the precursors which lead to banana and clove during fermentation. Dry yeast already has a hard enough time producing those characteristics, so unfortunately, I think your plan will produce a disappointing "wheat beer". You might get a nice fruity golden ale, though.

If you use no wheat then you would make a dampfbier rather than a wheat beer. I'm going to try making one in the coming months.

Going to try an extract hoegaarden style wheat beer. Is the muntons wheat spray malt 100 percent wheat, or is it a mixture of barley and wheat?
