Ragnarok Porter

Post by Deebee » Fri May 30, 2014 10:08 am

Hi all,

Managed to get a brew on yesterday.....

After drinking a Buly Porter and after getting help from the forums in regards to a recipe i managed to get this brewed yesterday. Thought I would try a short 10 litre trial batch nd see how it turned out.

The recipe is as followed based on 75%

1700 Pale
370 caramunich type 2
150 chocoalate malt
70 g special B
320 g Wheat malt
Hops
Magnum to 33 IBU @ 60
Simcoe to 11 IBU @ 40
Cascade ( luckily very little) to 2 IBU @5
Ahnatum to 2 IBU @ 5
Should have used S05 but never had any and the reculturing from the bottle was no where near big enough so I used Nottingham

In all the brewday was rather uneventful. The biggest issue I have right now is that the outside tap I use for cooling has some issues with pressure….. It really does not run through at any pressure, something that has happened recently. I have no idea as the pressure in the rest of the system is fine.

Anyways……..
The mill made short work of the grain.
Image I doughed in with my trusty paint stirrer and was amazed at how light the liquid looked. The porter was really dark ( around 49 EBC I believe)
Image
So I packed it up with a mash temp of 66 and left it be for 90 minutes ( am considering a shorter mash to see for myself if it has any realy effect on efficiency.
Image

But after the run off it was nice and dark and clear. Smelled absolutely great too
Image
Boil started to form.
Image
When the foam had started to fold in and I had a good rolling boil I threw in the magnum. These were pellets and I had forgotten ho much they cause a foam burst…. Almost a boil over.
Image
Generally uneventful day. Moved the boiler to the tap this time trying to get some more pressure but it never really helped that much
Nice cold break though
Image
So the money shot

Image
1062 ( planned 1058) after adjusting for temperature this equated to 1066 meaning 84% efficiency. I can only think this is todo with the mill. It means that I have to adjust settings infuture for my grist too.. but who cares!

So all tucked up at 20 in the fermentation fridge. Nothing explosive, nice and simple.Tastewise I never tasted any of the hops in the sample so may end up having to dry hope this one- will have a better ideawhen I take a gravity Monday.

Now…to fix that sodding tap.

Took gravity on this last night .
Down to 1013 with airlock evenøy filled with water both sides. Looks done!
Will take another reading friday.
Makes this on 7.1%:O

Tastewise is about right i think though it may be a little drier and thinner than the original. Will see how it changes over time in the bottle. If it turns out as i thinkni msy need to mash higher next time or just add some carapils

Even better! I'm serious, that will be an improvement on the already delicious commercial beer. Well played. Nottingham is an excellent way to sneak a few subtle English esters into anything calling for Chico/American Ale/US-05/Wyeast 1056/WLP001, etc...

Shame there is no way to get a bottle over to you Seymour. Would love to hear your views ( as someone who knows the brew) on my take. The sweet acidicity of the cara munich is there though, and it is dry ( although i believe 05 attenuates a little more than nottingham). The cascade is about how i like it( just there) and the Ahtanum is also in the backgroud, gives you a citrus note but without ripping the skin off your palet hehe.

Colour looks good so i will be very interested in it., Maybe have to do a side by side.

Looks great!

I'll keep en eager eye out to see how it turns out. I've yet to brew a porter, but it is on my list of things that I must do (But need to persuade the wife it's a good idea).

I am now lucky enough to have everything in the garage ( managed to get the water in there to work too now). So on my days off, i get to brew in the garage, tidy and put the Fv in the fermetation cabinet and be all done by lunchtime:) no sign of a brew anywhere:)

I'm not quite as lucky yet, the FV lives in a cupboard but it's used for other things as well. Good news is on the horizon though, we have just sold our house and had an offer agreed on a new one. The new house has an attached garage ... You can see where this is going! Plus I even have permission to go mad in it bring on the build in a few months (hopefully).

Our garage has 87m2 floor area. The brewery is in its own room. 13m2mancave.

You sure know how to make a man jealous!

I wont be that lucky, I'll get a corner of the garage :( sadly my wife is a work from home florist and the rest of the garage will be her workspace and shared worktops, etc!

At least I'm being elevated from a single cupboard and some boxes.

You are more than welcome Deebee.
I've tried to PM you but not entirely sure they are actually getting to you.

Enjoyed the pics of your brew day.

I collected a parcel from the post office today that had Norwegian stamps on it and felt very much like a bottle :D

Haven't had time to open it yet but I'll put it away for a wee while to let it condition. Very much looking forward to this - thanks loads for sending me some.
:D
