I brewed this back on the 4th.
Sterling pilsner: 4 gallons @ 1.052, IBUs 43 (+_)
5 pounds German pilsner malt
4 pounds Belgian pilsner malt
8 ounces German Vienna malt
8 ounces white wheat malt
.8 ounce saaz @ 3.2% to first wort hop
1.25 ounces backyard sterling @ 7% (+_) for 60 minutes
pinch irish moss plus 1/8 teaspoon nutrient for 20 minutes
.5 ounce b y sterlings for 12 minutes
1 ounce b y sterlings to steep
1 pack S-34/70 in 2 gallons
1 pack M-44 in two gallons
I mashed at 156f for 65 minutes
Both yeasts were pitched at 4pm. The M-44 showed signs of fermentation 16 hours later. The S-34/70 showed signs of fermentation 36 hours later which was , by far, the longest this yeast has ever taken for me.
I took a gravity reading of the ale part (65f) on the 11th: 1.012. On the 12th the lager part (52f) was 1.015. Both tasted good, different which was what I was going for, but good. I'll be dry hopping the ale part with glacier and the lager part with saaz and wakatu.
I plan to bottle the ale half on the 21st and rack the lager part into another carboy to lager for 6-8 weeks.
