Reculturing weiss yeast

Post by agentgonzo » Tue Oct 16, 2007 5:03 pm

I'm needing (OK, wanting) to make a hefe weiss after a trip to Munich a couple of weeks ago... there was some sort of festival on there

Anyway, I've recultured yeasts from bottles before, but does anyone know a good source of weiss yeast? I've heard that a lot of bottles have been filtered and a different priming strain put into the bottles which will make reculturing problematic. How close is hoegaarden yeast to a German weiss yeast as I've heard that that is the primary strain in the bottle?

The only weiss that I know uses the primary strain is Schneider, I have never successfully cultured it myself as I've encountered infections the two times I tried it . . . Now that I have the proper gear though I might well give it a try

Pretty different otherwise they would taste a lot more similar.

Cheers for the help on this one. It seems that the only supermarket that sells Schneider Weiss is Morrisons (who'd a thought it?).

Anyway, 2 bottles decanted and the yeast slurry cultured for a week, Prosit Hefe is now in the primary at 1053 and tasting nice! I'll let you all know how it comes out. :D
