Unless you have either 100 or 500g packs why do you want to keep an opened pack of yeast? 11g is the right amount for most 5 gallon brews.

I started buying my yeast in 500g from Charles Farms when ordering my yearly hop supply. I repackaged to my 100g pitching rate using old cleaned & sterilised Hop & Grape tubs. I store in the fridge it's been almost a year now & the yeast i have left is still working good even though it said on the packet use within 7 day's when opened
