What temperature do you sparge at???

I fly sparge and monitor the temperature of my grain bed. Through the use of various theories, have seen this grainbed temperature vary between 55C and 78C. Despite that, I've seen no difference to efficiency or the quality of my beers.

Therefore, I wouldn't worry too much.

That said, I tend to use a spinny sparger with water at 78C...... at least, until I hear another theory that makes sense to me.... :lol:

ANything from 65 degrees downwards depending on how well i have judged my volumes. 65 on a good day and tapwater cold if i have made a mess of it! AND still the beer forgives me and turns out well. :D

Guess its each man for himself on this one, what ever makes you happiest in your brewday, i will remember though that above the high 70's bad things that i don't really understand can happen so i will follow this advice and stick to my 65ish. For what it is worth my strike temp is always 72 deg.

I've just done my second AG and both times I used a strike temp of 72 but once mixed up the grain was around 64 so next time Im going to try 75

Jubby, I fly sparge at a temp that keeps my grain bed at 75-76 C. I've been getting 83-88 % efficiency recently and have never experienced tannins or husk off flavours

Q. Do you perform a mash out first ?
Q. What kind of efficiency do you get with your 65 degree sparge ?

I have not tried sparging at these low temperatures and I have never tried a mashout. I heat my water to 80 degrees and the bed temp. is variable around 70 degrees. My efficiency was 90 to 95% sparging down to 1.006. However, i have lowered my efficiency to 85% which allows me to stop sparge at 1.010. Just means i add a little more grain.

It would be interesting to see if low temp. sparging effected efficiency or quality, but I am not brave enough to try it :?

In the Brew Your Own British Real Ale by Graham Wheeler - Revised edition edition (14 Jan 2009)

I am sure it says to Fly sparge at 85C where as his early books say lower.

not got the details to hand at the moment but will check tonight.

I have been Fly sparge between 80c and 85C for my first 2 AG but now trying to check if this is too high.

The thermostat on my liquor tun is set at about 76C and this gives me the right mash temp. I don't go tweaking the thermostat and so my batch sparge is at the same strike temperature. Of course it is running onto already warm water and grain and so with each of the two sparges the MT temp increases slightly. Looking at info on amylase then this slightly increase in temp will stop the Beta amylase and encourage the Alpha amylase to finish off any conversion ( Right way round ?).

Doesn't seem to cause any problems, no off tastes, great efficiency, no lack or excess of body, just an easy working practice.

Do I remember reading on here that either Theakstons or Black Sheep or TT do a shorter mash time, because they then do a longer sparge at a maintained or slightly increasing temperature that is in effect part of the mashing cycle?
