IPA Brewday 11/06/2007

Post by Vossy1 » Sun Jun 10, 2007 10:11 pm

Tomorrow see's the V1 brewery return to action after last weekends break 8)

For your perusal we have an Townes IPA from M.Ollosson's real ales for the Homebrewer.

Recipe scaled to 80%

Recipe

9.15kg Marris Otter Pale Malt
370g Wheat Malt

Mash temp 65 deg c for 90 min
Mash liquor 27 ltr, strike temp 81 deg c

Boil time 120 min

99.8g Cascade hops (5% AA) bittering hops 120 min
124.8g Cascade hops (4% AA) bittering hops 120 min
67.5g Cascade hops aroma (last 15 min)
10g Protafloc (last 15 min)

OG 1045
FG 1010
Alc cont 4.5%
IBU's 58

Final volume 46ltr

I've had to split the hops for bittering as I have 2 packs with different AA values, ie, 4 and 5%.
I simply worked out the hop quantities for 2 x 23ltr batches, one with 4 and one with 5% AA hops. I can use the left overs from the 2 packs for the aroma hops as the AA isn't as important here

Will be a nice early start at 6am

Ruddy haze...you would bring that up wouldn't you :P

I think I may be able to track down that problem and I think it lies in the sparging 8)

I'll know for sure after this batch matures

Having said that the Bosun Best Bitter and the Thorshead are both relatively clear compared with others I've brewed

Both however have had longer in primary and secondary than previous brews...the Thorshead having 2 weeks in primary and it's clearer that all others so far, going to secondary today

Oh yee of little faith :D

Boil due to finish at 1140

Few changes to the system being made on this brew and so far so good. I tried to use my spinny sparger thingy at 2ltr/min but that's just too great a flow rate for it, so I had to go back to the Beertech gizmo :!:

My sparging technique since moving to herms has suffered greatly and I'm going to have to look into this. My efficiency is still very good.

Today I stopped sparging at 1012 and at this point had collected 50 ltrs which is just too close for comfort.

I may have to look into batch sparging or finding an alterative to the Beertech gizmo thing...maybe even returning to the good old faithful manifold :?

This ceratinly is a Pale Ale....very pale

All done now 8)

Cheers SW

Interesting DaaB, I had the same opinion with regard to wort collection but I'ts just been getting a bit close on the last 2 brews. If I'm not careful I won't be able to get the sparge down to 1012 before running out of room...though I suppose I could collect it for top up :?

Everything went fine today bar the cooling :?
I used the plate chiller andI got down from 93.5 deg c to 33 deg c in 29 minutes but to get down to 24 deg c took me another 20 minutes...this was recircing to the copper by the way.......49 minutes...ridiculous

Compare that to 23 minutes straight to FV....things will have to be looked at

Collected 46ltrs at 1045...spot on again 8)

It smelt really orangey when aerating....

Sorry if I am being stupid, or have missed something, but why are you having troubles with your spinny Vossy? :?

Hi BB, no not a stupid question at all

Even though the holes in a spinny dont point upwards if you apply a fast enough flow through one, like I did at 2ltr/min, the water shoots upwards

In my case upwards and sideways soaking the hound of hell who's gaurds my equipment

I think I may have to enlarge the spinny's holes :?

Time to play some more

I've just tried this ale out of primary (I've not even taken a hydro reading yet) but oh my god

The floral bucket is huge and the taste not too bitter but the aroma and flavour are huge 8)

Swinbo sampled it and said it's my best brew to date 8)

It has a massive lemon citrus taste and aroma. While it is still quite green it's equally as quaffable as the Styrian Stunner, though maybe you wouldn't want it in the same quantity, though I'm sure this will change with maturing

I added 84% more aroma hops than the original recipe...I'm not sure why this figure and under the influence of Chilean Merlot, perhaps I'll leave that one ti'll tomorrow

I will be loooking into my aroma hop rates based on this result for sure.....SD you're a bad influence

The all important feck test

Image

I just took a hydro reading and like the last few brews it's finnished below target at 1006 instead of 1010....oh well

Even at this early stage I can well recommend it Wez

I tried IanB's cascade ale when I picked my corny's up, and to say it made me look forward to me trying mine is an understatement :?

Put this one on the to do list

The above post should be in my IPA brew topic

I had a look at the Sunshine tonight and it has the cleanest yeast head of any I've brewed...

Does this mean I managed to leave most of the trub in the copper or that the prtoeins didn't ppt out due to the long cooling time with this brew :?

Vossy,

I temember Dan Listermann saying that the spiny is supposed to take 45 minutes to sparge 5US gallons of sparge Liquor. (That being the ideal time allegedly) As I'm brweing 10 or 15US gallon Batches thats way too much time for me so I sold the Spiny. I have a very simple manifold for recirculation and sparging, and am getting 85%+ regularly . . but not on the last batch which was 72%
