Wheat Beer 16/06/07

I have been instructed to make this recipe from CAMRA - Brew Classic European Beers at Home

Schneider Weisse

Wheat Malt 4Kg
Lager Malt 1Kg
Vienna Malt 1Kg
Caramunich Malt 360g
Oat Husks 100g?

90 Minute boil
Hallertau 25g

15 minute
Hallertau 10g

Mash 50oC for 20 minutes
65oC for 50 minutes

Using whitelabs WLP300 yeast

Any advice or alterations ?

Is it worth doing some later hop additions to give more aroma or should I get enough of that from the yeast?

Will try and take photos!

My hefe weizen has a smokyness to it im begining to think may have been caused by the caramunich, if i was making it again , id probably ditch it and replace it with some crystal 120.

Yep while I continue to carry out my orders

I have now been instructed to make tea, as SWBO is awake

edit: Cant say I blame her I would still be in bed if I had not woken up like an excited kid on Christmas day, at 6.20am

good luck with the brew, at least after ditiching the contents of the cornie on the floor overnight (i've done that also with a leaky tap :oops: ) you'll have somewhere to put it :D

Caramunich definately does not taste smokey, I use it regularly in one of my bitters. Recipe looks good, I'd personally do a single infusion but it's up to you.

Schneider Weisse is a great beer. I had their Eisbock which you can only get at their brewery tap, one of the best beers i've ever had.

Well I changed the malt bill to 500g of oat husks as I was paranoid about a stuck mash.

All went well until the boil, it never reached a rolling boil as the temp controller on the boiler kept cutting out. I had to syphon it off into a fermenter and scrub the element clean. Then put it back in and then it boiled fine.

Only got 20 litres at 1.052OG

There was so much crud in the bottom, I need a much bigger boiler so I can batch sparge and get maximum efficiency (beer) but with a 25litre boiler its hard to do a 30 litre batch!

Although SWMBO has decided she will be buying me a bigger boiler for my birthday so I can do ten gallon batches, any recommendations?

The brupaks ones both I and Seveneer use are nice but a bit pricey. The immersion elements they use don't seem to cut out like the kettle elements can (I had a similar experience to you when boiling a wheat beer in a kettle element powered boiler a few years back).
