I have been instructed to make this recipe from CAMRA - Brew Classic European Beers at Home
Schneider Weisse
Wheat Malt 4Kg
Lager Malt 1Kg
Vienna Malt 1Kg
Caramunich Malt 360g
Oat Husks 100g?
90 Minute boil
Hallertau 25g
15 minute
Hallertau 10g
Mash 50oC for 20 minutes
65oC for 50 minutes
Using whitelabs WLP300 yeast
Any advice or alterations ?
Is it worth doing some later hop additions to give more aroma or should I get enough of that from the yeast?
Will try and take photos!

If only I had rememered to read the forum again before I weighed all the malt out and thrown it in to a bucket.

Still should have the boil on in 30 minutes

Well its all in the fermenter and bubbling away.

Finals mash Temp (should have insulated it maybe)

Batch Sparge

Start of boil (1 st time around)

End of boil

How much cold break!!

Well I changed the malt bill to 500g of oat husks as I was paranoid about a stuck mash.
All went well until the boil, it never reached a rolling boil as the temp controller on the boiler kept cutting out. I had to syphon it off into a fermenter and scrub the element clean. Then put it back in and then it boiled fine.
Only got 20 litres at 1.052OG
There was so much crud in the bottom, I need a much bigger boiler so I can batch sparge and get maximum efficiency (beer) but with a 25litre boiler its hard to do a 30 litre batch!
Although SWMBO has decided she will be buying me a bigger boiler for my birthday so I can do ten gallon batches, any recommendations?

The brupaks ones both I and Seveneer use are nice but a bit pricey.
