Matts Zarzamora De Oro

Post by prodigal2 » Mon Jul 16, 2007 3:56 pm

After have a ingredients quandry(not having what I need to brew what I wanted)
Matt came up with a recipe for me discussed here, which I have named "Matts Zarzamora De Oro"

As usual I have scaled to 16L and will be brewing it in the next few days(well today if I can get my chores all squared off
 )

I had a thought for no other reason than I read it somewere on the forum of taking 2pints of the wort and boiling down to darken the colour, would this be a good idea or am I having a mental lapse that will do nothing for my beer?

I need this one to go better than the last as I ended up with elderflower malt vinager(thanks to the SWMBO moving the secondry around and knocking the lid off  )[/url]

I think that boiling the wort down is more likely to caramelize it making the final beer sweeter (afaik). This may also help darken the colour but I honestly couldn't say!

Boiling down the wort will definitely make it darker, and produce a caramel flavor that won't fade. The FG will be higher than normal, too. I don't know how much caramel flavor you're looking for, and the only way to go abuot it is experiementation, I'd say.

I used accidentally to make a caramelized pale ale that a lot of my friends actually enjoyed quite a bit. I was brewing with extract and boiling enough extract for a 2.5 gallon batch in a 4 quarts pan. I was very new to hbing and had no understanding of carmelization or unfermentable sugars...

Good luck and let us know how yours turns out.

Hi P2,

Did you get to do the brew in the end?

Let us know if you did/do and how it turns out - I've saved the recipe and plan to make it once it cools down (in September I guess). I've got the BX and Goldings in the freezer.

Not yet Matt due to the fact for the last couple of days i have been having a argument with a piece of granite bedrock, and at the moment the granite is winning  But I WILL have the last word.

Looks like I may have my IC tomorrow and fingers crossed my hops selection :)
But what ever I will make your brew in the next few days, as it has tickled my interest. And I owe you for posting a great sounding summer ale

HURRAH my IC has arrived, along with styrians, challenger, and EKG's along with some roast barley :pink: :pink: \:D/ \:D/

Downside is I have guests over for a week as of Saturday :(
So I need to try my darndest to get this brew done tomorrow. And then I can rack in a week or so to a secondry.
And then onto Styrian stunner, then again summer might start, but I very much doubt it. It should be in the 40's at the mo, but its struggling to get to the mid 20s on a good day.

Well when ever I get this in the FV, I will be using the calcs from your and EB's batch sparge calculator. And yes I will report back on the experience, and I'm using your batch sparge techniques as per your site :=P

The maths on the original version reads a lot better with the formula above the example, also the font size and boldness is more intelligible at a glance.

The introduction on the current version is better, along with the footnote about what the evaporation rate figure means.

The "notes" footer on the original is worth using it explains clearly about the figures you are using and why.

Either page conveys the info, you need to get batch sparging. Visually I prefer the original,(did I say that?) and it may be a bit of cut and past across the 2 to get the content flow, plumb bob on!!!

As ever DaaB great work and if you have any other stuff you want checking over, testing or info to use on a simple setup, just send it over.

Cheers mate, you and Jim got me brewing and for that I am in both of your debts

Daab, your hop replacement calculator (which I'll be using quite a bit) needs a bit of a tweak so you can enter the AA of the replacement hops to 1 decimal place.

I tried to PM you about it but it seems most of my pm's don't get sent for some reason :x
