100% Satisfaction

Post by Vossy1 » Fri Aug 10, 2007 8:01 pm

Brewday tomorrow morning and the missus has asked for a less bitter beer which she can enjoy with me, so I'll have to forgo my hop madness and brew something a little more tame.

I'm going to do 100% Satisfaction from M Ollosson's Real Ales for the home brewer. I've done it before and liked the results and another reason for brewing it is that I've run out of light pale ales.

So, it's going to be my second batch sparge and the original recipe efficiency has been dropped from 75% to 70%.

100% Satisfaction

Target OG 1040
Target FG 1009
IBU 24
Brew length 46 ltr

In the tun

9.64kg Maris Otter
Mash liquor 24 ltr
Strike temp 77 deg c
Mashed at 65 deg c for 90 minutes
Raise mash temp to 77 deg c and add 17.6ltr of liquor at 77 deg c to mash, recirc t'ill clear then run off.

Batch sparge 2, add 31.2 ltr of liquor at 80 deg c to the mash, stir and recirc ti'll clear then run off.

Pump 64.2ltr to copper/hlt and boil for 90 mins.

Copper hops 97g EKG (4.2%AA) 90 minutes, assuming 27% utilization and DaaB's hop calculator.
Aroma hops 60g EKG last 15 minutes (original recipe is 30g but I like hoppy beers)
2 x whirlfloc last 10 minutes

Yeast, S04 and T58. I'll split the 46 ltrs of wort into 2 and ferment with seperate yeasts for taste comparison purposes 8)

That looks like a nice, simple recipe. and it will be interesting to demonstrate how the yeast affects the flavour. I suspect you'll seperate the palate-educated from the palate-simple amongst your mates 8)

Vossy your returning to the crowd pleaser no.1 8)

The yeast comparison will be a interesting experiment, keep us informed.
And more importantly have a good one mate :=P

Oh yes 8)

I'm toying with the idea of doing a double brew day with a Styrian Stunner thrown in but I'm not sure I can be bothered

I'm not going to be able to live with myself
Swimbo had the camera for work purposes today so no pictures I'm afraid :wall

Brew day started at 12pm and all finished for 530pm

Batch sparge number 2 went without a hitch 8)
Got slightly more wort than needed (1ltr) but I'm happy with that

1st batch runnings 1057, second batch runnings 1026 and combined pre boil 1039, post boil 1040 (all at 20 deg c).

Cooling again took longer than anticipated. Ambient air temp 25 degc, ambient mains cold water 18 deg c. It took 50 minutes to get to 20 deg c :?, but hey I got there 8)

I recirced both additions of liquor for a full 10 minutes each, but the running were far from clear when run off. The boil was nice and clear t'ill I cooled. Most of the cold break has been carried to FV...oh well

Batch split with T-58 and S04 though having just sampled my Broadsword that may not have been wise, but I'll post those comments in Broadsword

Thanks for the input guys 8)

Not sure really :? If I forget about my haze issues for a moment, it seems quite inefficient. I'm using an extra kilo of grain and the second lot of runnings had a total gravity of 1026. I wish I'd kept more records, as I don't know what the final running gravity was :?

I'll reiterate the fact that I need to monitor the whole of the second runnings as even if my total efficiency is around 70%, that does not mean that the second runnings don't go below 1006, or whatever you care to finish at :?
Even with thorough mixing, sugars are sugars, they're heavier than water, and they'll sink to the bottom of a solution.
Having said that a HERMS system should negate that fact

Prior to starting my batch sparging, I did a brew when I intended to do a batch sparge. I realised half way through that I couldn't, due to my set up, so I simply threw the liquor through the mash, as if fly sparging but at 5ltr/min. I basically matched the output from a 15mm pipe to a collecting vessel, with the input form my pump. It worked and I'd call this fast sparging....it took 10 minutes

I also used ph5.2 on this batch...what effect this'll have I don't know.
What I do know is that the ph I have did not indicate ph 5.2 on my ph indicator strips !!!!

What I will say is that, if I started my mash with the initial total volume for batch sparge 1, I would have cut at least 10 minutes of my sparging time.
