My Eighth Kit, I've been away a while!

Post by GTATTY » Fri Oct 12, 2007 9:03 am

Hi all

I've not had much time to do anything since the Wedding and Honeymoon in June/July, but now things have quietened down I thought I'd do a brew today. :D

I'm gonna do the York Brewery's STONEWALL Kit.

Any tips/suggestions? All comments welcome.

Regards

Graham :)

Cheers Guys

Had a nice bottle of T Tailors Landlord to assist :D

No problems encountered, steeped hops for 20mins and removed. Sprinkled yeast on top of wort as instructed instead of making starter.

Original gravity 1.042.
Have had 2" of yeast head on it now for 2 days.

Welcome back Graham 8)

Unfortunately I haven't tried that kit but if it tastes anything like the other brews by the York Brewery it should be a grand kit.

Hi all

Just an update

Been testin SG over 2 days and it has been a constant 1.010 :D

I'm going to fill 10 bottles today and put the remaining in one of my corny kegs.

This brew tastes exceptionally good at this stage( quite mild with a good fruity hop character and with a slight smokey aftertaste) and is one of my clearest brews to date before going into the secondary :D

I think it compares very well to the York Brewery's original Stonewall at this stage but I'll see how it matures.

Now, do I use light spraymalt to condition as it says in the instructions or should I use glucose?

Recommendations welcome.

Cheers

A very pleased Graham.

Cheers Daab

Did everything today, but had no DME or Glucose because forgot about the mouse we had a month or so ago which ate through my storage container and had it all

Had som beer enhancer so added half teaspoon to each bottle and added 75g to Corny keg. This I've not tried before in secondary only primary!

Also did a 30 bottle Cabernet/merlot wine kit.

Fingers crossed

Will beer enhancer give good conditioning

Bit worried about the half teaspoon of beer enhancer per bottle. What ratio of malt to unfermentables is the enhancer ? You might undercarb the brew !!

It's 50/50 (glucose/dme or so i've been told) and you can't really under carbonate an ale like that, usually I find the residual carbonation from primary fermentation and the residual fermentable sugars is sufficient for a light carbonation similar to a cask ale.
That'll do me Daab, I hate overcarbonated real beer!

Hi all

I'm drinking the "Stonewall" now and it's a very nice pint. I gave 9 bottle of my 10 away to mates and am Pi%%ed off because I drank my bottle last night and it was bloody gorgeous!
The carbonation was just right and I was alo able to leave the little bit of sediment in the bottle.

The cabernet Merlot is now clearing and I've also bought a coopers ginger beer kit for Christmas drinking. Hamstead Brew centre have these on offer for 5 quid.

Can anyone tell me how to improve this kit and give it a bit more oompfh?

Graham :)

Hi Graham,

Thanks for this thread... I'm considering the Stonewall kit myself as i like the look of it.... (can't quite remember why though, definately heard lots of good things about it though).

Just to clarify did you make it as per the instructions or did you deviate at all.

I notice you raved about the (single) bottle you tried but how did this compare with the keg?? I only have bottles at the moment and find them more convenient to use so would probably do all bottles.

Dave.

Hi Dave

PM has been sent.

I preferred the bottled product to my cornelius keg product and wish I'd have done more bottles now!

It's nice ale in either though and recommend this kit over the Terrier one.

Gonna do this kit again soon but bottle more.

Fantastic pictures on your website BTW :) You could do with photographing some fireworks

Regards

Graham
