Storage/serving temps and side effects

Post by StrangeBrew » Tue Dec 19, 2006 7:43 pm

I've read on here that the optimum temp for storing beer and serving beer is around 12c and much below this could cause the beer to loose condition. I store my barrels in the shed and with the recent lower outside temperatures I'm concerned what are the side effects could be.
I've recently brewed a Coopers Draught that was clear and bright when barrelled but now, nearly two weeks later, it has darkened in colour and has a slight haze, although the flavour has improved. Could the cold have caused this colour/haze to happen?

Does loosing condition also mean that it would need drinking quicker?

I'd be more worried if the beer had time to lose condition :D

wot DaaB said, you've got chill haze which is reversible as the temp comes back up again. :flip:

So the haze is down to low temp but what about the change in colour, or is that all part of the same problem?
It should be golden yellow but is now more like a light amber.

If it's just cosmetic then I'll shut my eyes and keep drinking! \:D/

Beer does darken a bit as it matures

Stop typing, get drinking

You'll soon find the colour is out of focus anyway :D

Nothing wrong with cool temperatures for storing. In fact, that will help any rogue yeast, proteins & tannins settle out. However the coldness reduces the perception of flavour which is why i've taken to microwaving my ale for a few seconds  Lager is good down at ~4c though.
