I was thinking of doing a small batch of a strong barley wine, does anyone have a good recipe, maybe one of the durdern park ones or even just one they are happy with.
I don't have any exotic ingredients like amber or mild malt, just the usual pale various crystals and roasted malts.
Plenty of progress, fuggles, target and stryrian goldings needing used up (all the rest of my hops are new world ones amarillio, green bullet etc).
I could resort to clone brews but i'd be happier doing a tried and tested recipe.

A big beer like barleywine is best kept simple. Pale malt and maybe a bit of crystal. Add you favorite hops and an ale yeast that can handle your O.G. and you are set.
I used brown sugar in my first couple of barleywines and found out that I prefer it without the brown sugar.
My last batch was my favorite, it came in at about 9.33%. My previous efforts were all over 10%.

3.4oz Fuggles
Sparge 9 pints at 1.091 and boil with 2 oz of hops for 90 minutes. Sparge second 9 pints Og 1.056, boil with 1.4oz hops for 2 hours. Mature for 6-8 months and 3-4 months

Thanks for the replies, im tiling the bathroom floor today so i want to go with something very simple like a no sparge recipe (ie no second smaller beer), ok its a bit wasteful but it'll probably be the only way i can brew today, oh and i only have one remaining fermenter the others being tied up with lager and LP.
