barleywine recipe

I was thinking of doing a small batch of a strong barley wine, does anyone have a good recipe, maybe one of the durdern park ones or even just one they are happy with.

I don't have any exotic ingredients like amber or mild malt, just the usual pale various crystals and roasted malts.

Plenty of progress, fuggles, target and stryrian goldings needing used up (all the rest of my hops are new world ones amarillio, green bullet etc).

I could resort to clone brews but i'd be happier doing a tried and tested recipe.

Maybe going to do Dave lines imperial russian stout

for 2 gallons

3 Kg Pale malt
0.25 kg crystal
0.125 chocolate
0.125 black

0.5 kg brown sugar

mash at 66 C

100g of fuggles at 90 mins

nottingham or s04 yeast with maybe some wine yeast to finish the job?

A big beer like barleywine is best kept simple. Pale malt and maybe a bit of crystal. Add you favorite hops and an ale yeast that can handle your O.G. and you are set.
I used brown sugar in my first couple of barleywines and found out that I prefer it without the brown sugar.
My last batch was my favorite, it came in at about 9.33%. My previous efforts were all over 10%.
I'm just here for the beer.

You didn't say you wanted a barley wine :roll: . . . How about Simpsons of Baldock 1854 March Beers

OG 1.100 and 1.061 - Per UK Gallon!!

7lb Pale Malt
3.4oz Fuggles

Sparge 9 pints at 1.091 and boil with 2 oz of hops for 90 minutes. Sparge second 9 pints Og 1.056, boil with 1.4oz hops for 2 hours. Mature for 6-8 months and 3-4 months

I brewed these late November last year. 5 gallons of each :shock:

I'd recommend them. Despite still needing some more age they're both starting to come together.

Thanks for the replies, im tiling the bathroom floor today so i want to go with something very simple like a no sparge recipe (ie no second smaller beer), ok its a bit wasteful but it'll probably be the only way i can brew today, oh and i only have one remaining fermenter the others being tied up with lager and LP.

What about Dave lines version of Gales prize old ale.

10 litre recipe

pale malt 3.25 kg
crystal 0.5 kg
black 30g

mollases 125g

goldings 120g, don't have any might swop in either fuggles, styrians or progress for these, any suggestions.
