Well I have seen the literature concerning adding olive oil to beer and frankly I wouldn't touch that with a ten foot pole. My recommendation for anybody out there not doing this is to purchase a diffusion stone and one of those small O2 bottles you can get at the hardware store along with a cheap regulator. I rant about this issue constantly but running good fermentatons (with all that entails) makes all the difference when brewing and especially with high gravity worts as Mr. Seymour correctly points out. Nothing screws up beers quicker than a bunch of fusels; they taste bad and yes, the headaches are epic. I can not think of one beer style where fusels are acceptable, including all the Belgian styles. The major problem I have with adding oil is that I could see where it could absolutely kill the head on your beer......why not just add O2 and do it the traditional way?
