Late Hopping Advice

Hello, it's been a while. I'm currently trying to put some recipes together so I can put in a malt order and get some brews on. First on the agenda is a couple of pale and hoppy singled hopped brews, but I need some advice regarding the late hopping. Not sure wither to do two additions at 20 and 10 mins, or four additions at 20, 15, 10 and 5 mins. Thoughts...?

My hops are quite old as I haven't brewed for 18 months, although they've been stored in a deep freeze I imagine they've still lost a fair bit of zing. I'm assuming that I should really compensate by lowering the AA% a bit...

I think your hops will be fine providing they were vacuum packed.

If you want something hoppy, make all your late additions steeping additions. Chill down to 80c and steep for 45 mins, stirring a few times in between. You could always dry hop too.

I'd defs bring the bitterness down to around 30IBU as well. a 1.040 beer just won't carry it in my opinion.

Can this be done if a chiller is not used i.e i have to wait a while till i gets to 80C do i keep it at 80 using my thermostat on my boiler?

+1 I agree your OG is a little on the light side to carry 50 IBU with much grace so you may want to either save some of your hops or up the malt. Just a thought. Enjoy the brew.

You're not the first to suggest ditching all the late additions and chucking them all in to steep, maybe there is something in that... ;-)

It was originally going to be 1050, but I wanted to go for something slightly weaker as my last two attempts were supposed to be 1050...
