No idea what yeast they are using but they get 85% attenuation - thank god, there is nothing worse than a big hoppy American style IPA that finishes too sweet on cask - I see from another thread that Orlando managed to get 82.5% with recovered adnams yeast from a minikeg. so if you mash low enough and aerate and pitch enough I imagine that will do

I think it needs more bitterness probably, I assume a big brewer would get better extraction? Or not?
