Stone/Adnams DIPA

Saw on mitch steeles blog that he is releasing another brew with Adnams for 'spoons - given how excellent their last offering was, I can't wait to try it. He also posted the brewsheet on his blog so I thought I'd give it a bash in brewtarget

No idea what yeast they are using but they get 85% attenuation - thank god, there is nothing worse than a big hoppy American style IPA that finishes too sweet on cask - I see from another thread that Orlando managed to get 82.5% with recovered adnams yeast from a minikeg. so if you mash low enough and aerate and pitch enough I imagine that will do

simpsons tipple was used, not maris otter as I have put

not too sure on the hopping times

I think it needs more bitterness probably, I assume a big brewer would get better extraction? Or not?

Spoons usually have their beer nice and cold so I don’t think it’ll get too cloying.

Was a nice offering, but unfortunately (Muggleton Inn, Maidstone) could've done with having it a little cooler, was a little too chewy as it warmed up.

Fermenting -
Conditioning - Meads - Raspberry Melomel yeast test, Vanilla Cinnamon Metheglyn, Orange Melomel.
Drinking - Youngs AAA Kit; Leatherwood Traditional Mead, Cyser, Ginger Metheglyn.
Planning - Some kits until I can get back to AG, then a hoppy porter, Jim's ESB, some American Red.

I got some burned rubber from my sampling of it

By and large I prefer cask/handpull for most beers but this one I thought would have been better with more carbonation

Still, pleased they are doing these collabs and at £2.40 a pint or whatever it was it's great value :o

I was hugely unimpressed with this one. I think I over egged it and got too excited.

It tasted to me like any old Black IPA any other brewery could have created.

I LOVE stone though so hopefully the next one will be good :)

Interested to see how your recipe turns out :)

I had this in my spoons in Salisbury and loved it.
Would have been more drinkable a little cooler and with more carbonation but its rare to get an 8% on cask out in this part of the world
thought the hopping was spot on too

Just a small question for you, what's Simpsons Tipple? I don't see it on the Simpson's site as a standard malt!

Tipple is a english spring barley variety, maybe their pale ale malt is tipple?


it might be that they only sell it by contract to various brewers and so have no need to list it on their site

if you email them I'm sure they'll tell you the details of it
