I have just brewed a stout and was expecting to hit 1.056 I actually hit 1.044 how do I add spraymalt to get it back to 1.056?

If I add warm honey to the fermenter that should work, shouldn't it?

I wouldn't add honey - this will ferment out almost completely and leave you with a dryer beer than expected and no sweetness to balance your hops.

You could just heat up and boil about 700 grams of spraymalt, cool it down and add it to the FV, however i've found spraymalt to give off a very strong DMS aroma after a 15 min boil when making a starter.

How many IBUs did you calculate for your recipe? You could just leave it as it is and age it for a couple of months to lower the bitterness?

I thought about the dryness factor and decided to go ahead and add the honey as its a stout and it can handle the dryness. My target was 1.056 I have added about 500g of warm honey and its now at 1.052 My IBU was 51.9 with some hops probably 6 monts old so the IBU's may be a bit lower.

Could I add some sweetener to the finished stout before putting it in my cornie?

I know where I have gone wrong with this brew, I used too much water and ended up with 21 litres instead of 19, so I am just trying to salvage it for bonfire night.

A bit late now....

....but I would have recalculated the hops etc. and reduced the volume (by boiling) until it reached the gravity I was looking for.

This is not always practical but would give a beer truer to what you were aiming for.
