S04 or US05?

S04 or US05?

I am currently mashing Traquair House Ale Clone a Scottish Ale from BYO 150 Classic Clone Recipes.

What is the best yeast out of the two I have available at the moment in my stores. S04 or US05?

I normally use S04 but if US05 will give me something more I would give it a go.

The recipe only has hop additions at 90 and 30 minutes so was not sure if US05 is to give me more hop aroma?

Or I could split the batch I do have all day to get it sorted :D

For my Scottish ales I use S-05.

Probably US-05 would be best

Why would you use US05 on a scottish ale?

S04 worked well for my THA.

S05/us56 is an american ale yeast. It is a very neutral yeast which will not give the english ale character of something like s04. It is an excellent yeast for any beer where you want the hops to be the defining characteristic, as with so many american beers...
I would go more for s04 myself in a scottish, but you could always consider a blend...

Because they tend to have a subdued ester profile

Well it has US 05 in it now.
As its a big beer I manged to get another smaller beer of the second runnings.
I do love 5.2 stabiliser more mash for your money, for lazy people like me :D

My hillbilly relatives came from Scotland in the late 1600's. Then married cousins. So before the "others" were allowed in the gene pool could I have claimed 5/4ths?

awalker, next time make a big batch and pitch both yeasts. Do a comparison. I just did that with an S04 and a Nottingham.

I make really good scottish ales with US 56 Yeast i just mash a little higher for a more dextrinous wort.The trend with modern scottish commercial ales is having a bigger hop profile than in the past which i prefer anyway. I love this yeast even though i find it a poor clearer issinglass sorts it out so it's not a big deal

I would go US05 but as Rab says make sure you mash really hot for a thick mouthfeel. The White Labs Edinburgh yeast gives a really authentic flavour too.

White Labs Edinburgh yeast worth investing in?

I have hear it can give of some strange esters if the temp get up, compaire to standard ale yeast

I thought we all claimed to be 1/2 Irish (I think German is actually the most common ethnic heritage per the census).

Although my family does claim some Scottish . . .

I don't know why but roughly 1/2 the people here are at least somewhat interested in where their family comes from whether real or imagined. The 1/2 could care less.
