Which recipe is this? I seem to remember trying to order the ingredients for one of GW's recipes from my local shop and they didn't have an ingredient. This could have been the recipe as I definetely brewed this one once. As it is a long time ago, I don't have the details of what I used but the local Home Brew Shop sorted out the 'nearest' thing in whatever recipe it was that I was lacking.
For strength you could consider brewing sugar and to get back some of the body and Malt Notes that will be lacking, use 100g of Crystal. I am guessing a bit really but substituting 'this and that' is what the hobbies all about & you may even end up with a brew, though not absolutely identicle to the original - just as suited to your palate.

Daab - do you mean cut out the brewing sugar and use Maize or still use sugar/ get rid of Crystal? I suppose if one is mashing anyway then it is just as convenient to bulk it up with maize than to use grossly-body-decreasing-sugar? Not sure if that's what you meant but as I try to avoid adding sugars, this would seem a better compromise ... good idea!

Re: Real Ale Almanac
I can only second that thought. The Bluebird I did from your recipe was a real cracker, and will be done again when I get home at some stageDaaB wrote:Hi Norman,
Thanks for taking the time to convert the recipes, it's much appreciated

Cheers Norman for the time you put in. I hope you give your formulations the odd run out now and again

Extract Kit - Marston Pedigee Bitter
Bought an Australian extract kit of Marston Pedigree Bitter which has a can of malt and about 2kg pack of sugars, malt & hops. HBS supplied a Wyeast Thames Valley Ale. Looking forward to making soon BUT
wouldn't know what to expect. (never really had English beer)
By the kit and some recipes, I'm guessing this is a light coloured beer, not heavily hopped. Correct ? What is the balance between bitterness and aroma (Fuggles v Goldings) in this bitter ? ie how bitter is Marstons Pedigree Bitter in real life (can someone give me a IBU estimate ?)
What sought of carbonation should I aim for - big heads, small heads, lightly carbonated, heavily carbonated ?

HELLO - The question of what indredient to use instead of maltose syrup was posted on my behalf by shimsham. Many thanks for the various replies received.
The recipe I used came from GW's book and in the end I decided to subsitute the same weight of flaked maize as suggested. I brewed it on Sunday with a mash efficiency of 80%. Will let you know how it turns out!
