Modified Bitter &Twisted

Post by Belto » Sat Nov 03, 2007 9:25 am

What a day in prospect,
Brewing, @ 0730
Arsenal @ 1200 rs,
Bonfire meet @ 1800 hrs,
50th birthday '@2000hrs
Joe Calsakgie (or however it is spelt)@ 2400+ hrs

Anyway back to my brew for today
I am using Calum's spread sheet to help me understand what I am doing.
So far it has been very helpful and accordingly have been reaching 75% ish efficiency
I have increased the brew length to the max for my MT
If I am brewing why not go for the max.
the Original Recipe came from Barley Bottom (on the forum somewhere)

Bitter & Twisted (Brewery in Scotland so Calum tells me)
MO 4.860kg
Crystal malt 0.320kg
Flaked barley 0.150kg
Torrified wheat 0.320kg
Flaked maize 0.180kg

Fuggles 75g 90mins
Styrian Golding 25grm 15mins

Aiming for 52 ibu & 5% ABV
Is that correct ?

I like a bitter Ale

Comments on the Recipe & Process most welcome

Water already heating must go soon
grain mixed and ready @ 11c

I aim to mash for 90 mins Sparge til 0.00 @ what ever temp is from MT
add to boiler, Normally not enough room in Plastic bucket.

Then sparge until 1.010 @ 20c and add to boiler.
Will take brew length and SG at this stage to determine efficiency of extraction.

Well thats it off to continue and if anyting unusual happens will be back with comments.
Happy brewing to all for today with this bright and sunny day in propect

Ah yes well and truly up & awake. Glad to hear the brewday's going well 8)

50+ IBUs seems a touch high for B&T, but as you say, you like 'em bitter! :)

Right back again for an update
Thought I had plenty sparge water, wrong
Ran out, had to heat some more
White run off bucket full and into boiler 22.5 ltr
SG approx 1.002 @ 68c
Continued sparging 1.020 @22.7c added 8.5ltr to boiler
waited until boiler contents cooled to 22.5c SG now 1.052

meantime back at the ranch my wife was shouting for the towels if I wanted any breakfast

In amongst sparging, cooling and taking temperatures I was stuffing a hot sausage sandwich and slurping a cold cup of tea trying not to drop it into my wort.
They say men can't multi task.

Boiler on so now for an update
Looking for my south Wester and water proofs, yes it is 25c in the south facing greenhouse but when the Hot break occurs so does the condensation on the glass roof and I normaly get wet.

As usual time plan has gone out of window concerned about Viewing Arsenal.
This is going to be a long day, but to date brew going well.
Not sure about total hops, will it be too Bitter?

I don't want my anus smacking the back of my throat at the first sip

My baby all packed up and put to bed
Pitched with 1.5 pkts of Danstar Nottingham yeast
Last brew similar length went to SG 1.010-1.012 I think because not enough yeast was pitched.

Finished with 31ltr from MT SG 1.052 @22.5C
Boil for 105 mins due to Arsenal
Run off 21.5ltr SG 1.068 @ 22c
added 8ltr water to bring to 1.050@17.5c

On reflection a good brew day and hope for a good beer as a result
approx 30 ltr
No dinner yet have to wait for the barbe @Fireworks tonight

Then on to the 50th birthday
Then back home hopefull to watch the Big Fight if I can keep awake
