I obtained some marstons pedigree yeast from my local landlord and used it to brew GW's Wheelers Wassail followed by Marstons Pedigree.
The Wassail was made on the 28th Oct and still has a gravity of about 20. It is now in demi-johns and still fermenting slowly. The Pedigree was brewed on 4th Nov - 7 days later - and was down to 1011 within a week. In fact I am now going to cask it and add 2oz of priming sugar because there is no further fermentation. - Any ideas why this should be?
The only clue I've got is that the Wassail average mash temperature was about 67/68C, whereas the Pedigree was about 66C.
