As this seems to be No.1 in the JBK hit parade, I fancy an extract go. There are issues that I could do with a bit of advice tho.
I've got two 1.6Kg tins of John Bull Maris Otter LME (pre-boiled!) I'll make it up to 1040 - 1045 so I'll imagine that'll be about 20 Ltrs.
Then using Daabs hop calc. and aiming for an IBU in the late 20s the hop schedule with a full boil would be something like
70gms Styrian Gs (3.1) 60 mins
20gms last10 mins
20 gms steeped 20 mins
maybe a handful dry hopped, but that pretty much uses the hops all up.
However I can only boil 5 ltrs, poss 6 after any boil up, over and out has passed. Not a problem for the pre boiled LME but the bittering will be I think. Is there a utilisation figure for just a quarter of the full vol for the boil vol? (makes sense?)
I'm not concerned about being too precise so I was thinking of boiling for 90 mins (much difference?)
I think a saw a recipe somewhere that had 50% challanger for bittering. I've got some at 5.6 or is this drifting too far away from a Stunner. I'd quite like some styr. golds. left over as I fancy a Landlord clone in a bit.
Also Safale S04 or Nottingham?

Your biggest problem is your boiling volume - are you saying your pan only holds 6 litres? Or 6 litres of water and the extract? Either way you will get poor hop utilization if you add all the extract at the beginning of the boil. So apart from investing in a much larger pan or boiler (which would be my number one recommendation) I would do two batches, one with maybe only half a can and make your hop additions accordingly as for a 20litre batch. hmmmm. not sure, my personal preference is Nottingham but that is simply because I'm not fond of so4, I seem to recall vossy saying SO4 is well suited in this brew.andyp wrote: Also Safale S04 or Nottingham?

According to the Tinseth hop utilization formula:
(Utilization @ G1) = (Ulilization @ G2) * 0.991^(G1 - G2)
Where G1 and G2 are specific gravities (in points).
For example, if you are boiling with 1/4 the total water and your OG is 1.045 then according to the Tinseth formula you should use 3.39 times more hops.

Now that I've got my new big boiler I'll definitely do another one in the spring and get it even more gorgeous.
